Homemade Kitchen by Alana Chernila is a great reference for anyone who wishes to up their DIY game in the kitchen. She starts out with the basics: How to cook an egg, roast a chicken, cook vegetables, make jam, pickle vegetables, cook grains, make a pie crust and basic salad dressing. Each chapter takes you a bit further, increasing your self-sufficiency until you’re making your own cheeses, tofu, cultured butter, bagels, braised meats, apple chips and mayonnaise. She also includes information on reusing scraps like stale bread and whey for reasons both frugal and delicious.
I originally thought this would be a great reference for a 30 something friend that’s made a resolution to learn to cook and eat out less, but paging through even as a seasoned cook and caterer I’ve learned a lot and been inspired to take on seemingly more complex cooking projects. Next up, my own tofu!
